Big Idea: There is no substitute for real relationship.

I. Introduction

One Sunday afternoon when I was a kid...maybe eleven or twelve years old, I decided to bake some chocolate chip cookies. Now, my mom and dad were either not home or they were taking a nap or something, but I figured I didn't really need them. I'd done this plenty of times before, so I mixed up the eggs and the sugar and the vanilla and I was ready to start mixing in the flour when I discovered we didn't have any flour. But I really, really wanted some chocolate chip cookies and I remembered that, at the beginning of the Betty Crocker cookbook, there was a list of substitutions. The idea was that if you were a little short of one ingredient, you could substitute this other ingredient. So I flipped back there and, sure enough, it said if you were a little short on flour, you could substitute one teaspoon of baking powder for one teaspoon of flour. And it turned out we had a lot of baking powder, so I put in two cups of baking powder in place of the two cups of flour I didn't have.

Now, I have since come to understand that these were intended to be very small-scale substitutions. In a pinch, it works fine to substitute one teaspoon of baking powder for one teaspoon of flour. Substituting two cups of baking powder for two cups of flour, on the other hand...does not work all that well. I almost ruined the oven. I don't know if you know this, but baking powder is a leavening agent, meaning that it causes dough to rise when it's heated. Typically a cookie recipe calls for maybe a teaspoon of baking powder to be mixed into a couple of cups of flour. So when you substitute two cups of baking powder for two cups of flour...holy cow. What happened in that oven was a lot more like a science experiment gone wrong than a baking mishap.
